THE BLEEDING HORSE
Ingredients:
- 2 oz. Pearse 5yr Original Irish Whiskey
- ½ oz. simple syrup
- 2 dashes orange bitters
- 2 dashes aromatic bitters
- Orange peel, for garnish
Preparation:

Stir all ingredients well with ice and strain over an ice-filled rocks glass. Garnish with the orange peel.
NICK & NORA
Ingredients:
- 2 oz. Pearse 7yr Distillers Irish Whiskey
- 1 oz. sweet vermouth
- ¼ oz. Suze Gentian Liqueur
- ¼ oz. Yellow Chartreuse
- 1 dash chocolate bitters
- 3 drops saline
Preparation:

Stir all ingredients well with ice and strain into a Nick & Nora glass. Garnish with a maraschino cherry.
DUBLIN 8 SOUR
Ingredients:
- 2 oz. Pearse 7yr Distillers Irish Whiskey
- 1 oz. fresh lemon
- 1 oz. house-made turbinado sugar simple
- Egg white
- Angostura art, for garnish
Preparation:

Dry shake egg white with all other all ingredients except bitters, then add ice and shake all ingredients well with ice. Strain into a chilled cocktail glass and garnish with Angostura art.
IT’S ALWAYS SUNNY
Ingredients:
- 1 ½ oz. Pearse 7yr Distillers Irish Whiskey
- ½ oz. Hidalgo Gobenator Oloroso Sherry
- 2 oz. Zardetto Prosecco
- Expressed lemon & peel, for garnish
Preparation:

Stir first two ingredients well with ice and strain into a chilled cocktail glass. Top with prosecco and express lemon peel for garnish.

LIBERTIES HIGHBALL
Ingredients:
- 2 oz. Pearse 5yr Original Irish Whiskey
- Top with fizzy lemon soda
- Dash of aromatic bitters (dealer’s choice)
- Orange peel, for garnish
Preparation:
- Build in an ice-filled highball glass and garnish with the orange peel.
